Lazio, the vast central region of Italy has Rome at its heart. The Eternal City has a cuisine influenced from an ancient and glorious past. Strong, earthy flavours, Artichokes, mint, wild greens, meat, and in particular the Romans love of offal, il quinto quarto, or ‘the fifth quarter’ as it was known. The workers in the large Roman slaughterhouse districts around Testaccio and Trastevere would often receive some oxtail, tripe or other less noble parts of the beast as part of their salary and today many restaurants in these areas still serve these delicious traditional dishes to appreciative locals and visitors alike.
