Gip Dammone, co-owner of Salvos, recently took on a mission to develop a pizza base that not only tasted ‘just like mama used to make’ but was gluten and wheat-free too. Working with Bradford- based company, Brazilian flavours, all of whose ingredients are gluten and wheat-free, he developed a mix which creates delicious thin crust Neapolitan style pizzas.
With the recipe now perfected, Gip plans to offer gluten and wheat free pizzas as part of Salvo’s much loved Italian menu. “It is important to us that all our dishes look, and above all taste authentically Italian. However, we were finding that some of our customers were not able to have our pizzas due to these allergies. I’m looking forward to offering a whole range of gluten and wheat-free pizzas and hope that our customers love them as much as we do!”
The Leeds Coeliac Group welcomed the news. “It’s great that Salvo’s has put time and resources into producing gluten-free dishes, the new pizza base will no doubt be a big success with local coeliacs”, said Pamela Atack. “We hope other restaurants will follow Salvo’s example and create gluten-free menus so Leeds coeliacs can eat out and not worry about becoming ill.”
